Concept art for Epic Disney Racers, another cancelled Epic Mickey spin-off
Looks like Epic Donald isn't the only cancelled Epic Mickey spin-off. Epic Disney Racers was once in development for unnamed platforms, and it seems like the main mechanic was similar to that of Mario Kart: Double Dash!!. You can check out some more concept art here (thanks CM30!).
