Snipperclips devs hadn't gotten a single offer from other publishers before Nintendo scooped the game up

SFB Games and Nintendo worked together to bring Snipperclips to the Switch, but the game's origins rest firmly with SFB Games. They had a working prototype of the game long before Nintendo got involved. SFB was in the process of pitching/showcasing the game to various publishers to see if they'd bite. Believe it or not, not a single publisher had shown interest in the game. That is, until Nintendo came along and saw the prototype. Soon thereafter, Nintendo said they wanted to bring the game to Switch.

“We actually hadn’t heard any other offers, so it worked out perfectly.” - Tom Vian, SFB Games

Can you believe that an outstanding, quirky, and unique idea like Snipperclips was passed on by multiple publishers? We don't get to hear what companies skipped out on the game, but clearly they made a big mistake!
