For a few weeks now, there's been a small uproar over the fact that you can't turn off motion controls in Pokemon: Let's Go Pikachu/Eevee. Turns out that's only partially true. While you'll have to use motion controls when playing docked, you'll have another option when playing in handheld mode. The following statement was provided to IGN by Nintendo.

“Pokémon: Let’s Go, Pikachu! and Let’s Go, Eevee! do not require players to use motion controls or physical gestures when in Handheld Mode. Instead, players can use the joystick on the left Joy-Con controller to aim and press the A button to throw a Poké Ball. The simulated throwing motion associated with the Joy-Con controllers or Poké Ball Plus are intended to enhance the gameplay experience, but are not required to play these games.”

Good to know you can keep things more still when playing in handheld mode. That definitely makes a bit more sense for the portable players out there. Just keep in mind that your only option when docked will be motion controls.
