These suckers would sell like crazy
Plenty of people have said they want GameCube-style Joy-Con for the Switch, and a few companies have tried to mimic either the style or functionality of that classic controller. Nothing feels as good as the original though, which is why modder Shank spent months reworking an actual GameCube controller in a set of Joy-Con. ...and yes, you can slot them on the Switch!
